Tamales update: Finished. I’ll figure the cost per dozen tomorrow. I’ll compare my pile to five dozen at the market. I have fewer than five dozen, but that’s because I didn’t know what the heck I was doing! They are way bigger than normal tamales, so I easily have the ingredients to compare to five dozen market tamales.
I will not factor the increased traffic of Door Dash to our house because I was either too tired or had the kitchen too tied up for home cooking.
In the freezer and vacuum sealed

Tamale update: Finished the beef yesterday. Tasted today. Spicy- there are three kinds of peppers- but not toooo spicy. Masa holds together nicely. In the freezer now and then will portion them into tamale six-packs.
Today: Pork tamales. Vegans will have to wait for my next batch. I’m eager to try pinto bean tamales that Olga Navarro-Bobish told me about. Her mom made them. We all loved Mrs Navarro!

Tamale Update:
TASTE TEST: Had a pork tamale with a couple of over-medium eggs. Very tasty, but the tamale would have been pretty dry without the egg to mix with it. This was from a batch made on Day 1 – still haven’t tasted the Day 2 pork tamales.
COST: As close as I can figure, these tamales cost me close to $20/doz. I see The Tamale Kitchen, here locally, sells them for $30/doz. So I get about Ten bucks per dozen for the blood, sweat, and tears factor. (Still not factoring the extra Door Dasher visits during this kitchen extravaganza!)— feeling crazy.
Experience: Invaluable Worth it! I still have some masa – gonna make some pinto bean tamales!

Hola! My tamale-making Mujeres amigas, I’ve decided to make my own tamales this Christmas season because I am not willing to pay $18-20 a dozen for them. Camille Court and Marie Scott Marks and anyone of my other friends who make tamales, please give me tips and tricks for a beginner!

Tamale adventure v4.2. Thank you Sheryl Proehl Vasquez and Lance Vasquez! I got my meat at Bichelmeyer Meats as Lance suggested. And as Lance, said, I let the butcher know this was for tamales. What a great market. High quality meats, helpful and friendly butchers. They deboned and chunked my meat.
Then, the San Antonio Meat Market for all peppers and other ingredients. Again, such helpful folks. Heck. I was wandering around like a lost soul with my Google Translate app until the nice lady came to help me.
Local peeps – The meat market is in KCK. Worth the drive! PLUS on Saturdays they have a hot food market: home cooked street tacos, tamales, and other goodies. I live near Oak Park Mall and the market is about 20 minutes away.

Me and my tamales. I am interested in learning about and experiencing as much as I can, the cultural aspect of tamale making. So, for my first time, I don’t want to take any modern shortcuts – because it’s not primarily about the cooking for me (this time). I had a friend who wrote this wonderful essay about tamale making and the passing of culture from women to girls. I can’t experience that, but I am mindful and respectful of the history and culture.

Tamale Update: Tamale saga coming to a close. Seeded and simmered ancho chilies. Tossed them in the blender with garlic, cumin, salt/pepper and a bit of water. Heated the refried beans with half of the chili mixture and squished the rest of the chili mixture into the leftover masa. Quick and easy. Had enough masa for one more tamale, so I scrounged in the fridge and found bbq pulled pork leftover from one of the Door Dash deliveries.

Still on my tamale-making quest! Learning about different chili peppers: chili pasilla (from the chilaca pepper), Ancho chilies (we know this one – from the poblano pepper), Guajillo chilies (from dried mirasol peppers), chiles de árbol.

As I mentioned, I’ve ordered Red Kitchen Tamales a dozen of pork and a dozen of nopalitos. For those of you not from my home territory of south Texas, here is a Google explanation :
Nopalitos are strips of prickly pear cactus – they may be pickled or canned. The texture of cooked nopalitos is similar to okra. He ordered a nopalito salad

I am from south Texas and our tamales are high on filling and low on masa. I’ve had a hard time finding tamales like that here in the KC metro. The Red Kitchen tamales were wonderful. I had pork – the filling was moist and flavorful. The masa was firm, but thin and dry. I could easily hold the tamale in my hand and it didn’t fall apart. My husband had the vegan tamales & he said they were also seasoned very well. To top it off, Mexican wedding cookies. Oh yes. Moist, but not mushy. I’ve had Mexican wedding cookies that were so dry it made me pucker! I shall return for tamales and cookies.

Nothing like a homemade Texas tamale.

Traces of Texas reader Tres Sanchez was so kind as to send in this funny photo of “Texas Energy Bars.” It serves as a reminder that it has been too long since I have had tamales. I need to change that soon.
